Caesar Salad – little gem lettuce, classic dressing, brioche crouton, white anchovy, lemon,

Chicken Liver Mousse, hibiscus gelee, grilled country bread
Course 2 (choose one)
Chicken Piccata – heirloom chicken breast, white wine-lemon butter sauce, crispy capers, herbed polenta, spinach
Grilled Pacific Swordfish – roasted red garnet yams, charred cauliflower, romesco sauce,
arugula-fennel crunch
Falafel – crispy chickpea fritters, humus, babaganoush, grilled pita, marinated olives,
cucumber-tomato salad
Fillet Mignon – 21day aged black angus beef fillet, potato puree, charred brussel sprouts,
tempura onion rings, horseradish cream
Course 3 (choose one) served with Piece Bros Coffee or Artisanal Tea
Blue Berry Brown Butter Cake w/ blue berry compote and brown sugar Chantilly
Dark Chocolate Mousseline w/ toasted pistachio crackle and blood orange coulis

Wines start at $7/glass and beer is $7 for bottles and $8 for draughts. All bar and restaurant charges at The Club must be paid with credit card. Tips may be cash
Guests will be invited to order from this menu night of event, and there is no need for a pre-order. Call or email Lisa Hughes directly to make reservations, at 802.297.4034 (office) or lhughes@stratton.com by Dec 6, 2018.
The Club will also take a credit card # at time of booking to hold reservation, and any cancellations will need to be made by 3pm on the 13th. If there are no-shows, The Club will charge $35 per person to card on file (this is standard cancellation policy used for all guests). Guests will be allowed to pay individually evening of dinner.
